Okay, Mollys down for her morning nap. So with any luck I will have about 2 - 3 hours to do some chores.
Heres the chore list to keep me honest ( and from taking a nap):
1) Water backyard grass
2) Bake a chocolate cake as requested by hubby. ( And since we dont have a chocolate cake mix, I cant cheat. Boo!)
3) Clean out the cat box. ICK
4) start loading songs on my MP3 player that hubby got me for Mothers Day.
5) find good pork chop recipe for dinner tonight.
6) wash bedding
7) vacuum bedroom
8) clean bathroom.
Better get too it.

I'm so excited! Ive been reading blogs for about 7 years now, and have always wanted to have my own. I just was never quite sure what to do with it.

So I leave you with this - my current obsession, and so so easy to make:
Flourless Chocolate Cake
makes one 8-inch cake
4 ounces of fine quality bittersweet chocolate. ( NOT unsweetened)
1 stick of good quality unsalted butter
3/4 cup of sugar
3 large eggs
1/2 cup of unsweetened cocoa powder, plus additional for sprinkling if desired.
Preheat your oven to 375 degrees and butter a 8 inch round baking pan. Line the bottom of the round with waxed paper and butter the paper. ( Trust me, this makes the clean up easier.)
Chop the chocolate into fine pieces. In a double boiler or metal bowl set over a sacue pan of barely simmering water melt the chocolate with the butter, stirring constantly until smooth. Remove top of double boiler or bowl from heat and whisk sugar into chocolate mixture. Add eggs and wisk well. Sift 1/2 cup of cocoa powder over the chocolate mixture and wisk until just combined. Pour batter into pan and bake in the middle of the oven for 25 minutes or until the top appears to have a thin crust. Cool cake in pan on a rack for 5 minutes and then invert onto serving plate.
My Notes : My family loves chocolate, so i double this recipe and use my 12 inch springform pan. It makes removing the cake so much easier! I used a thick glass bowl over a pot of simmering hot water. I found that the eggs were very hard to incorporate by just using the wisk so ended up dumping it all into my kitchenaide mixer and using the wisk attachment. Even with doubling the recipe, I found 25 minutes to be too long, and the cake had a more cake-y texture. It supose to be creamyyyyy. I plan on making this cake again today or tomorrow and will try decreasing the baking time 5 minutes.
Also, instead of sprinkling cocoa on the finished cake. I used my tea steeper spoon, scooped up some powdered sugar in it and tapped it to put a very fine layer of powdered sugar. It looked so pretty! I hope to remember to take a picture of the next one to show you all.
This cake is so easy to make,, and seems so "upscale" Ive already decided to add it to my dessert list for this years big holiday dinner.
