
yay! I can finally participate in Tammy's Tuesday Kitchen Tips. I really love that feature of her blog.
And soooooo heres my yummy cookie recipe. Yummy and full of really good things!
Aussie Bites
2 cups oats
2 cups whole wheat flour
2/3 cup brown sugar
1 (3 1/2 ounce) can unsweetened coconut
1/2 cup sunflower seed
1 cup dried fruit (raisins, dates, figs, cranberries, etc)
1/4 cup honey
1 cup unsalted butter
1 teaspoon baking soda
2 tablespoons hot water
Directions
1Preheat oven to 350 degrees (farenheit).
2Combine first six ingredients in a large bowl.
3Melt honey & butter together in microwave; set aside.
4Mix baking soda with hot water and add to butter mixture.
5Pour butter mixture into dry ingredients and mix well.
6Place tablespoons of mixture into non-stick mini-muffin cups (no need to grease) and flatten mixture slightly. Bake 10 minutes or until golden. Cool on wire racks.

Nancy, These cookies are amazing! Our local Sams Club sells an Aussie cookie, but they are sooooo expensive. When I saw your recipe, I had to try it. Even the kids in my house that don't like coconut like these cookies. I used dried cherries and they turned out so good! Thanks for sharing. Dianne
Im so glad you like them! We also use to buy them from Costco, our version of Sams Club, but the cost added up. So I had to find a better way!
